Sick of Being Sick and French Toast

Ugh. We were all sick on Monday with the flu. It was awful :( It seems like every other week we are sick and I am sick of it!

On a happier note: Sunday we had a delicious breakfast of vegan french toast.

Vegan french toast! What?! How can that be? You need eggs to make french toast!
We are not vegan, but we like to eat that way when we can. Also, I've somehow become kind of allergic to eggs. But anyway, here is the recipe for vegan french toast that I've adapted from one of my favorite cookbooks "Skinny Bitch in the Kitch

1 baguette or bread of choice
3 tbs corn starch
6 tbs brown rice flour (or any flour maybe)
1 or 2 tbs sugar
a pinch of salt
some cinnamon 
1 1/2 cups soy milk
1 tsp vanilla extract
oil for the pan

Mix all the dry ingredients together, then add the wet ingredients and mix some more. Let the bread soak in the batter for a little while. Heat the pan to medium, grease it, add the bread and cook until golden brown on both sides. Buon Appetito!

Love/Hate

Our Sunday was off to an excellent start with a trip to the Waffle Window for breakfast. This place has the most delicious waffles in the world! They are so dense and sweet and they come with the most awesome toppings and they are only like $4 each. If you are ever in Portland or anywhere near Portland you must go here. Here is what we had:

After we ate our entire fat and calorie allowances for the day we decided to brave the craziness that is Ikea and things pretty much went downhill from there...

I knew it was going to be a madhouse, but we needed things and I wanted Marshall's help. Quinn and I alone at Ikea are useless. She wants to sit on everything in the store (except for the shopping cart seat of course)...

and I want to take my time and look at all the cool things I could to do to the house but I get so overwhelmed I can't make up my mind and then Q starts to cry and I get all frazzled and then we just have to leave. But with Marshall at the helm we were actually able to accomplish quite a bit. Yes we were there almost all day and Q and I ended up waiting in the car for an hour and a half while Marshall went to find all the stuff in the warehouse and waited in line 4 different times, but we managed to get just about everything we needed. Yay! I'll post pictures as soon as we get everything assembled and put into its proper place. Wish us luck!
